Well, I’m unemployed again. I left this last job on wonderful terms with everyone, but the office environment was just not the right fit for me. I’m very fortunate to be in a situation where I have the freedom to find a great fit for me professionally.
This does sadly mean no more free lunch every day. And now I have to do food prep in my tiny Manhattan kitchen, so food has to be even simpler than before. Here’s my food formula for this week’s lunches:
- 1/2 cup ground turkey
- 1/2 cup brown rice
- 1 cup steamed broccoli
All of those items are super easy to make large batches of, even in a super tiny kitchen. And since I seasoned everything very lightly I can change the flavor of the meal every day.
Today I added a spoonful of greek yogurt and some buffalo wing sauce to the ground turkey. Not the most glamorous of lunches for the week, but it is delicious, nutritious, and budget friendly!
