Ahhh what a wonderful morning I’ve had today! Anthony’s father and step mother are visiting this weekend, and I thought they would be here a lot earlier in the day than they really will be arriving. SOOO I still took they day off from work anyway. I had enough PTO so why not?
AND Anthony’s thesis defense for his master’s is today! Even though I couldn’t go watch him give the defense, I’m super excited for him and I wanted to be home when he’s done to celebrate!
I made us some super healthy protein pancakes this morning. I said I made them because he needed a good breakfast before his big presentation, but really I was just craving them and knew I would have more time this morning to make food.
This is a variation of Blogilates’ 2 ingredient pancakes.
What you need (makes 2 servings):
- 2 bananas
- 4 eggs
- 1 scoop of protein powder
What you do:
- Put all of the ingredients into the blender and blend until completely smooth. This step is super important!
- Cook the pancakes on a pan just like you would normal pancakes. Flip them once the start to form bubbles on top.
This recipe made 10 4″ diameter delicious pancakes per serving. Super yummy, and very healthy. I highly recommend you try this one! They’re only 322 calories per serving, and you can see the other nutritional information below:
After Anthony left this morning I decided to do a quick workout. I’ve been slacking on my workouts this week and boy did it feel good to get even a 20 minute workout in!
I’m a big fan of the Blogilates YouTube channel. She has such great and short pilates videos that are just so much fun to complete! My workout this morning definitely incorporated one of her fantastic videos.
I did the Lower Belly Flattener video followed by a 3/4 mile run.
Yup, I took a post run selfie. Sorry I’m not sorry. I was so excited that I ran the whole time AND my face didn’t do that super weird/freaky half red thing…. YAY!
