Oh the salad jar. It’s such a crafty little idea. My only problem with them is that I don’t own large enough mason jars to hold my greens… But I guess that’s a very personal salad jar problem to have.
Mason jars have the ability to keep a week’s worth of salads fresh and handy for your busy work week ahead. I found this delicious Caprese Salad Jar recipe on Pinterest (duh).
What you need: (in jar layering order if your greens are in the jar- makes one)
- 2 Tbsp pesto
- 1 cup cherry tomatoes
- 1.5 oz fresh mozzarella, chopped
- 2 oz cooked whole wheat
- Chopped fresh basil
What you do:
As I said, I have smaller mason jars so I had to do things a little differently than the original recipe. I was able to use more spinach since it was in a separate container!
If you want a more raw salad, just layer all the ingredients in the order listed, and seal your jar until you’re ready to enjoy it.
If you’re like me and have weird aversion to most raw vegetables, you’ll enjoy the salad more if you cook the tomatoes a little (and yes, I’m aware tomatoes are technically a fruit). I cut my tomatoes in half and sauteed them in a pan with the basil, some olive oil, and some balsamic vinegar. Much better in my opinion.
This is a super quick and easy lunch prep that can easily be done before your busy week begins!
