Thai-style Broccoli and Chicken Salad

I like to make this Thai-style broccoli and chicken salad for lunch and turn it into a wrap. Other possibilities for this salad: on its own as a side, on top of rice, or with pasta.


What you need (makes 4 servings):

4 portions of chicken breast

Bag of broccoli slaw

For the sauce:

6 Tbsp natural, unsalted peanut butter

6 Tbsp low sodium soy sauce

1 Tbsp apple cider vinegar

1 Tbsp vegetable oil

2 tsp sriracha hot chili sauce

What you do:

Cook and shred the chicken. Sauté the broccoli slaw in a little bit of water, and add the shredded chicken once the broccoli is slightly softened.

In a small bowl, whisk all of the sauce ingredients together and add that to the chicken and broccoli slaw.

Per serving, there is around 293 calories in this dish.
