I love Chipotle. I can easily eat a whole burrito or bowl with chips in one sitting. But then I leave with a food baby that takes hours to stop kicking… Not a comfortable feeling.
So whenever I have a hankering for Chipotle, I whip up my quinoa and chicken bowl topped with avocado.
What you need (makes one serving):
1 serving of chicken
1/2 cup cooked quinoa
1/4 cup black beans
1/4 cup canned tomatoes & green chiles
chipotle seasoning, cumin, salt and pepper to taste
What you do:
Cook quinoa according to package. Cube up your raw chicken and place into a heated pan that has been lightly sprayed with non-stick something (I have an olive oil mister that works wonderfully). Season the chicken with the chipotle seasoning, cumin, salt, and pepper. Move the chicken around occasionally until it is cooked (don’t move it too much or it won’t crust up well).
Add the quinoa, black beans, tomatoes with green chiles, and corn to the pan. Stir all of the ingredients together.
Once everything is warm, plate it and top it with a defrosted avocado cube.
This meal is around 438 calories per serving.
