I LOVE orange chicken. I’m super predictable during Chinese takeout nights. “Kristen, what do you want- I’m ordering Chinese?… Never mind, you’ll have orange chicken.” Something along those lines is the standard conversation I don’t need to participate in.
So I came up with this recipe so I can enjoy it more often without feeling so guilty.
What you need: (makes 2-3 servings)
- Tiny bit of coconut oil
- 2 chicken breasts, cubed
- half a head of broccoli
- 2 carrots, shredded
- rice (optional)
For the sauce:
- 3/4 cup orange juice (freshly squeezed is ideal)
- 1/4 cup ketchup
- 1/4 cup soy sauce
- 2 Tbsp brown sugar
- Sriracha to taste
What you do:
Whisk all the sauce ingredients together and set aside.
Warm some coconut oil in a pan (preferably a wok if you have one). Add the chicken and cook it thoroughly. Add the vegetables and cook for only a couple of minutes (basically just until they aren’t raw any more).
Pour the sauce on top of the cooked ingredients and let it soak into everything. Keep stirring so nothing burns!
Serve on top of rice if you choose!
