It’s been a while since I’ve posted anything. It’s been an extremely eventful couple of weeks in my life- with a very close family member being in and out of surgery/the hospital and my boyfriend and I moving in together. An interesting combination of good and bad stress.
In times of stress, healthy eating is that much more important. I’ve managed to continue to eat lots of veggies and cook some pretty tasty meals at home.
One of my latest meals, found via Pinterest of course, is hummus crusted chicken. Holy crap… It was beyond delicious.

What you need (makes 4 servings):
4 chicken breasts
As much squash as you can fit in the bottom of the pan (I used a big bag of baby squash from costco)
Hummus of you choice (I used roasted red pepper)
Olive oil, salt, pepper, paprika
What you do:
Preheat your oven to 450 degrees. Slice and dice your onion and boat load of squash. Toss that mixture in a little olive oil, salt, and pepper. Spread this on the bottom of your baking dish.
Season both sides of the chicken lightly with salt and pepper. Place the chicken on top of the squash mixture. Top the chicken with the hummus. How much hummus you will use depends on the size of the chicken and your love of hummus.
Squeeze some lemon juice on top of that beautiful creation, and bake for 25-30 minutes.
Enjoy! I served mine with a side of red quinoa. Why red quinoa, you ask? Because the giant bag of that was cheaper at Costco than the white quinoa.
