I love avocado! I grew up being told I would hate guacamole, so I never tried it until I was about 22 years old. Now, I put mashed avocados on so many things!
The problem with avocados is that they are perfectly ripe for such a short period of time. My solution to this is to make a large batch of mashed avocados in my Kitchen Aid and freeze them in an ice cube tray. Then, when you have an avocado hankering, all you have to do is pull a single serving cube from the freezer and enjoy!
What you need:
A Costco sized bag of avocados (also know as 6)
4 Tbsp lemon juice
6 Tbsp lime juice
Salt, pepper, and garlic powder to taste/preference
Cut your avocados in half and scoop the guts into your Kitchen Aid (or use a bowl and hand mixer, but I strongly suggest EVERYONE obtains a Kitchen Aid… I’m obsessed with it.) Add lemon juice, lime juice, and seasonings. The citrus juice is very important in keeping the avocado nice and brightly colored. Mash the mixture into your appropriate consistency, chunky or smooth.
Add the equivalent of 1/4 of an avocado into the ice cube trays and freeze.
Once the avocados are frozen, it is helpful to run some warm water under the ice cube trays to remove the cubes more easily. Now you have way more servings of avocado than any normal person should eat in one sitting!
