This may be one of my easiest meals to throw together in a hurry. And, at only around 210 calories, this sweet and sour chicken is way healthier than anything you can get a restaurant.
What you need:
1 serving chicken breast
2/3 cup bell pepper strips (I use Trader Joe’s frozen)
2 Tbsp Catalina light dressing (I use Kraft)
Sriracha or crushed red pepper to taste (optional)
What you do:
Since my bell pepper strips were frozen, I added them to a lightly oiled pan first. While the peppers are cooking, cut the chicken into evenly sized strips and add them to the pan. Once the chicken is cooked, add the Catalina dressing and let that simmer for a minute. That’s it, super easy!
